Recipe for Triple Chocolate Yule Log Masterclass

For the sponge:
  • 5 large eggs, preferably free-range or organic
  • 140g / 4oz golden caster sugar
  • 75g / 3oz self-raising flour
  • 40g / 1oz good quality cocoa powder
For the chocolate mousse filling:
  • 100g / 3oz dark chocolate, roughly chopped
  • 100ml / 3fl oz double cream
  • 1 large free-range or organic egg, separated
  • 2tbsp caster sugar
For the rich chocolate buttercream:
  • 75g / 3oz dark chocolate, broken up
  • 60g / 2oz butter, softened
  • 160g / 5oz icing sugar
  • 2tsp cocoa powder, sifted
  • 80ml / 3fl oz double cream
  • 1tsp vanilla extract
For the garnish:
  • Holly and berries, to decorate
  • Icing sugar, to garnish (optional)

Begin by making the sponge. Pre-heat the oven to 180C / gas 4 and lightly grease a 23 x 32cm (9in x 12in) baking tray and line with parchment paper. Separate the eggs and place the whites in one large bowl and the yolks in another. Add the sugar to the yolks and beat with an electric beater until the mixture is thick enough to leave a trail. This will take about 34 mins. Sift together the self-raising flour and the cocoa with a pinch of salt, then gently fold it into the mixture with a large metal spoon until thoroughly combined. Do this gently to preserve as much air as possible, however the mix will be quite thick at this point and it will have deflated a bit so dont worry about this. Clean the electric beaters well, then use them to beat the egg whites until stiff. Beat 1 tbsp of the whites into the egg, sugar and cocoa mixture then very gently fold the rest of the whites in, again using a large metal spoon until well incorporated. Spoon the batter into the tin and level it. Bake for 1215 mins until the top is firm and well risen. Place a piece of parchment paper slightly larger then the size of the baking tin on top of a clean tea towel and sprinkle it liberally with caster sugar. Then, when the sponge is ready, remove from the oven and carefully place over the parchment paper, sponge-side down. Gently roll the sponge up quite tightly with the tea towel and leave rolled up for about 1520 mins. Meanwhile, make the chocolate mousse. Melt the chocolate and the cream in a bowl over a pan of boiling water, making sure the water doesnt touch the bottom. Stir together and leave to cool slightly, mix in the egg yolk and 1 tbsp of the sugar. Beat the egg white until frothy then add the remaining sugar and beat until stiff. Now gently fold the beaten whites into the chocolate mixture. Chill for 3040 mins until the mixtures firms up to a thick spreadable consistency. Unroll the sponge and remove the top layer of parchment paper. Leave to cool completely. Make the buttercream by melting the chocolate as before then leaving it to cool to room temperature. Meanwhile, beat the butter with half the icing sugar, the cocoa and a pinch of salt and slowly combine with the melted chocolate. Add more of the icing sugar little by little, beating well between each addition. Pour in the double cream and vanilla and keep beating until smooth. Evenly spread the chocolate mousse mixture over the sponge. Carefully roll up, removing the parchment paper on the underside of the log as you go along. Dont worry if the sponge sticks a little, once the icing is on you wont be able to see it. When you are nearly at the end, slice off the last 1cm (in). Then cut off 1cm (in) at either end of the log. Now slice off a 7cm (3in) piece on the diagonal and place this on the side of the log so it looks like a small branch.
