Recipe for Omelettes

  • 2 large eggs
  • 2 teaspoons water
  • Salt and pepper
  • Large nut of butter
 

1.      Beat eggs lightly with water, salt and pepper. Do not whisk.

2.      Using a small frying pan ( a 6-inch is ideal) heat butter until frothy, but not browning, tilting pan so that bottom and sides are well-coated.

3.      Pour in eggs. After a few seconds move edges with a fork or spatula to allow uncooked egg to flow underneath.

4.      Continue for about 2 minutes until set underneath and turning slightly golden but still a little moist on top

5.      Fold in half, tilt onto a warm plate and eat at once.

Variations:

Add 1 tablespoon finely-chopped parsley or 1 tablespoon grated cheese when beating eggs. Or making a filling of fried mushrooms or crisp chopped bacon or shredded pieces of poultry, well seasoned and heated in butter, or skinned and sliced fried tomato, or thinly sliced kidney or chicken liver fried lightly in butter. Put the hot fillings on to one half of the omelette, fold the other half over.
