Recipe for Cotswold Dumplings

2 oz (50g) butter

  • 4 oz (110g) grated cheese
  • Salt and pepper
  • 3 small beaten eggs
  • 5 oz (150g) fresh white breadcrumbs
  • 2 to 3 tablespoons dried breadcrumbs
  • Fat for frying

1.      Cream together butter and cheese. Add salt and pepper.

2.      Beat in all but 2 tablespoons of the beaten eggs, add 1 to 2 tablespoons crumbs

3.      Work in remaining crumbs to make a stiff paste

4.      With floured hands, roll mixture into small balls. It will make about 36. Leave for about 1 hour. This allows the crumbs to absorb the moisture, and swell a little - prevents bursting on cooking.

5.      Using a skewer, dip each ball in remaining beaten egg, then roll in dried crumbs.

6.      Heat fat - it should be 3 inches (7.5cm) deep. A chip basket is an advantage. To test heat of fat: Drop in a 1-inch (2.5cm) cube of dry bread - it should sizzle at once and gradually go golden in 1 minute.

7.      Place dumplings in basket, only 1 layer, and fry for 1 and a half to 2 minutes until golden. Do not overcook. Drain on kitchen paper.

Eat hot with home-made tomato sauce. Try also serving the tomato sauce cold as a dip for the hot dumplings.
