Recipe for Carrot Soup

  • 1 oz (25 grams) butter, bacon fat or pork fat;
  • 1 lb (454 grams) carrots, cleaned and grated;
  • 1 grated onion
  • 1 chopped stick of celery
  • 1 and 1/2 pints (710ml) of stock
  • 1/2 teaspoon of sugar
  • 2 tablespoons top of milk or thin cream

1.      Melt butter in large saucepan, and carrot, onion and celery, cook gently for 10 minutes to soften vegetables.

2.      Add 1 pint of stock and the sugar, simmer gently for 15 mins.

3.      Sieve or liquidize.

4.      Add rest of stock, test for seasoning, (if stock is well flavoured, extra seasoning may not be necessary).

5.      Boil up. Stir in cream. Heat, but do not boil again.

6.      Serve, sprinkled with parsley.
