Recipe for Caramel Custard

  • 3 oz (75g) granulated sugar dissolved in 1 tablespoon of hot water.

1.      Dissolve sugar in water in small heavy pan and then boil, without stirring, until golden.

2.      Have ready heated an ungreased, 6 inch (15cm) heatproof soufflé dish or similar, or 6 inch (15cm) cake tin. Pour in the caramel, tilting to coat the bottom.

3.      Allow to cool and set.
  • 3 eggs and 1 egg yolk
  • 1 tablespoon vanilla sugar
  • 3/4 pt (425ml) milk

1.      Beat eggs and sugar together lightly, but not frothy.

2.      Pour on the milk.
3.      Strain into caramel dish.

4.      Place yhe dish inside a small dripping tin or container with enough cold water to come half way up sides of dish.

5.      Cook at Gas 3 (325F/170C) for about 1 hour until firm. TO test, slip knife in diagonally, taking care not to touch the caramel. Knife will come out clean if custard is cooked.

6.      Leave until cold. Turn onto a plate and serve.

Keep the spare egg white for your yorkshire puddings.
