Soon after going organic in 1999, we realised that our milk, delicious as it is, would never generate enough to sustain the farm. Making a cheddar, which we could market ourselves seemed a more lucrative solution.
Local cheesemakers, following their 70 year old recipe, used our milk to produce Godminster Vintage. By 2000 the cheese was ready to sample and we discovered a delicious, more profitable, use for our milk. Selling started at our local farmers' market in Wincanton. Now we supply shops all over the UK and our fan base, along with our range of products, continues to grow.
Our organic cheddar is redefining the way cheddar ought to taste. Less crumbly than traditional farmhouse cheddars, it is uniquely creamy in both taste and texture. As a vintage cheddar, it has to mature for over twelve months to allow its tangy, yet smooth, taste to develop.
Fresh green apples, crunchy oatcakes, some of our delicious beetroot and apple chutney, melted on toast, in a cheese sauce, with quince jam, chilli jam or damson cheese, with a warming glass of red or a refreshing pint of cider or, best of all, simply on its own.
